   Coriander / cabbage Pakoda ( for 4 portions)




 1) take two sprigs of fresh coriander & chop them roughly , & take one large onion slice it fine add to coriander , take 1/3 of a cabbage finely chop & add to coriander .


 2) take cheakpea flour around 200 gms , add 1/2 tsp red chilli powder, 1/2 tsp coriander powder, salt ( to taste) now add all the chopped vegetables in that. Add tiny bit of oil in this & mix now add water to it make thick consistency dough .


 3) heat oil in a pan for deep fry, take a small portion of the mix &add to the hot oil fry both side well , take it out in a paper towel to soke extra oil .


 4) serve with mint  & Coriander chutney .


 5) preparation of chutney - i) take 1 sprig of mint & 2 sprig of coriander add salt & sugar (to taste) one green chilli , lemon juice to it now make a paste in a grinder .. chutney ready to serve .

                                   Paneer (cottage cheese) kofta




        Ingredients-


                     1) Cottage cheese ( Paneer) - 250gms


                     2) Potato         (boiled)  - 2 nos.

                   
                     3) chooped raisins          - 25 gms

                   
                     4) cornflour                - 2 tsp

                   
                     5) Salt & Sugar             - to taste

                   
                     6) Onion   (finelly chopped)- 1 nos (large)




   For Curry - Ingradients-

                             1) Tomato (boiled, grounded) - 2 nos.

                             2) Onion   (boiled , grounded) 1 nos

                             3) Cashew nuts paste

                             4) red chilli powder          - 1/2 tsp

                             5) corriander powder          - 1 tsp

                             6)  Garam masala              - pinch
                           
                             7) salt & Sugar                - to taste

                             8) oil                         - to cook

                             9) cumin seeds                 - pinch
           






 Recipe -   kofta-  1) mash the paneer add chopped onion, raisins , salt Sugar, & corn flour in that.


                    2) make small balls of that mix keep aside .

                    3) heat oil in a deep pan & deep fry the koftas keep aside.




Recipe - curry -- 1) heat oil in a pan add cumin seeds let them crackle

                           2) add mashed boil potato & fry it & take it out.  
               
                          3)  add oinon paste , fry for a minute, now add tomato paste

                          4) add corriander powder, red chilli powder fry till oil starts leaving the masala.

                           5) add cashew nuts paste fry till oil completely leaves masala

                           6) add the fried mash potato in the masala mix it nicely

                 
                          7) add water  let it boil for about 2-3 minutes , when water s reduced add the koftas

                          8) cook till gravy is thick take it out, sprinkle garam masala on top.


                           9) serve hot with Bread, parathas, or Rice

 Pasta in sweet Tomato honey sauce


    Ingredients:-  1) Pasta ( prefer Spagetti) for 4 portion


                   2) 5 large tomatoes


                   3) 2 cloves of Garlic (finely chopped)


                   4) one Large Onion    ( fine slices)


                   5) Basil leaves        ( 5-6)

                 
                   6) Honey               2 table spoons


                   7) Tomato puree        3 table spoons


                   8) green chillies      2-3


                  9) Sugar or artificial sweetner ( Sugar 2 tsp)


                   10) Olive oil                   ( for cooking)


                   11) Salt & Pepper               ( to taste)

                   
                    12) Vinegar                     ( 1/2 tsp)


   Recipe-   1) Boil the Tomatoes then take it off & run under tap water for few seconds.


             2) Grind the tomatoes with little salt , 3-4 black pepper corns & 1 leaf of basil, keep aside


             3) heat oil in a pan add chopped garlic, green chillies to it then add sliced onion fry till onions are tender.


             4) add the tomato mix to it with little water, when statrs to boil add 3 tbs. of tomato puree,

           

             5) adjust the seasoning, add vinegar , sugar, & honey to it let it become very thick.

           
             6) boil Water add Pasta to it when its ready take it of run under cool water

             
             7) take out Pasta to a serving dish, pour the tomato sauce , also basil leaves mix it.

           
             8) serve hot. garnish with basil leaves.

Tea Snacks recipe

                        Cabbage Pakora- delightful little tea snack



              Ingredients- 1) one-third of a medium size Cabbage ( finelly chopped)

                           2) one medium size onion                  ( chopped)

                           3) cheakpea flour (besan)                  100gms

                           4) salt

                           5) Red chilli powder                          1/2 tsp.

                           6) coriander  powder                          1/2 tsp.

                           7)  Oil                                       ( for deep fry)









              Preparetion -- 1) take finelly chooped cabbage in a bowl.

                             2) Add all the above mention ingredients to it. (except oil)

                             3) add 2 tsp of oil into it mix it properly.
                           
                             4) add water according to proportion in the mix & make athick batter

                             5) keep it in frrezer for 1/2 hour
         
                             6) heat oil in thick bottom pan for deep fry

                             7) spoon small amount of batter & put it in oil deep fry it.

                             8) seve hot with mint chutney or tomato ketchup

Indians Sncaks recipe

                 Cottage cheese & Spinach Tikkie


   Ingredieants - 1) Spinach -500 gms
                 
                  2) Cottage cheese ( paneer) - 300gm

                  3) ginger& Garlic (paste)    - 2 tsp.
 
                  4) corriader powder           - 1 tsp

                  5) red chilli powder           - 1/2 tsp

                  6) Besan                       - 200 gm

                  7) cashewnuts/raisins (chopped) - 20gm
 
                  8) salt                          - T.T

                  9) Oil for shallow fry



  Preparation-   1) wash & chopped the spinach

                 2) now add mashed cottage cheese to spinach

                 3) add rest of the mentioned ingredients to spinach & mix (except oil)

                 4) make patties from the mix not too big size

                 5) heat oil in a thick bottom pan & shallow fry the patties

                 6) serve hot as snack with ketchup or mint chutney

                                                       Chicken in White Gravy   






       Ingredients:-
                        1) Chicken (800 grms) boneless

                        2) two medium size onion (boiled)

                        3) 1 inch of Ginger

                        4) 3-4 cloves of Garlic
                       
                        5) Curd (200gms)
                       
                        6) corriander powder
                       
                        7) red chilli powder
                     
                        8) Garam Masala

                        9) refined oil ( for cooking)

                        10) Cashewnut paste ( approx 50 gm of cashew)

                        11) salt, Sugar ( to taste)
                       
                        12) coriander leaves ( for garnisg)

                        13) whole cinnamon stick (2pcs)



       Method:-
                 1) Wash & clean Chicken, cut into medium size.
                 
                 2) Marinate Chicken with Curd, salt & little bit of Garam Masala powder leave it for 30 mins
               
                 3) Make a paste of Cashewnuts, & separately make paste of onion ,ginger garlic.

                 4) Heat oil in a Kadai/ thick bottom pan add cinnamon sticks.
           
                 5) Add the onion paste & fry it till it leaves the oil.

                 6) now add Cashewnut paste fry for another 2-3 mins.

                 7) Add red chilli powder , coriander powder, sugar, salt to the pan, cook till its well mixed

                 8) Add marinated chiken to the pan, mix it well. slow the gas oven let it dry all the water cover

                 9) When see oil leaves the gravy mix, add little more water let it cook until chicken is tender
                 
                 10) Sprinkle garam masala powder before taking it off from oven

                 11) Garnish with chopped coriander leaves, serve hot with rice or bread

Red kidney beans pulav

 Ingredients:- 1) Rajma ( red kidney beans) 1 cup ( soaked, pressure cooked)
                   
                     2) Rice ( basmati)  according to individual choice ( approx. for 4 persons)

                      3) green beans chopped ( about 200gm)

                      4) one onion ( large , sliced)

                       5) Capsicum  (thinly sliced)

                        6) sugar ( 1 tsp.)
                     
                         7) salt, pepper, according to taste
       
                          8) garam masala (one pinch)
                         
                           9) oil for cooking
                         
                           10) cumin seeds

                            11) coriander leaves for garnish


How to prepare :-  1) soak Red kidney beans, over night then pressure cook them till they are cooked.

                               2) cook the rice & drain the rice water, keep them aside,
                               
                                3) take a thick bottom pan set in on the gas oven & add oil in it let it heat up, now add       cumin seeds & cinamon sticks (2-3) let the seeds crackle

                               4) now add onions let it fry for a minute when its bit translucent add a teaspoon of sugar
                               
                                5) add rest of vegetable in that & fry for ( approx. 2-3 mins)

                                   6) add red kidney beans to it fry for another 2-3 mins add salt to it.

                                     7) add rice & mix it properly for before taking it off the gas add  garam masala

                                      8) garnish it with freash coriander leaves , serve hot, with curry
