                                          Pulao in orange carrot juice with peas



Ingredients - for 4 people

                                            1) Basmati Rice - 250 gms

                                            2) Carrot juice -    4 nos .

                                             3) orange juice -  2 nos .
                     
                                              4) peas            -  50gms

                                              5)  assortment of cashew , almonds - 25 gms

                                              6) cinnamon  stick &  cardamom  - 2-3 nos

                                               7) oil  ( sun flower or soya )        - 2 tbs

                                               8) sugar & black pepper ( crushed) - 2tbs

                                                9) Salt - to taste

                                                10 ) water - to cook

                                                 11) saffron - a pinch ( soaked in warm milk )


Recipe --

                   1) wash & soak the rice for 1/2 hour , then drain it dry .

                    2) add oil in Handi or deep pan  heat than add cinnamon & cardamoms

                    3) now add peas to the oil  fry a bit now add rice mix them well

                      4) add salt & sugar black pepper  mix , now add orange juice & carrot juice see if needed

                         than add water , sub marge the rice but do not add too much water , cover the handi

                      5) low the gas let it cook in slow heat or if in pressure cooker than three- four cities enough .

                       6) un cover add the cashews & pistachios , & pour saffron milk on top mix it well

                       7) serve hot with Paneer curry .

                                                       Jeera Rice with Cashew Nuts  



 I am so on Rice kick today hence after Rice noodles its typical Indian Jeera rice with cashew nuts .. its nice & easy to cook & glorious to eat with  Chicken or Mutton Curry or  for Vegetarians with Panner curry .. Now with on the recipe .


               Ingredients - 1) Basmati Rice - 300gms 

                                    2) Cashew nuts - 25 gms 

                                    3) cumin seeds -   10 -15 gms 

                                     4) Sugar & salt -     to taste 

                                      5) sprig of Coriander leaves 

                                       4) oil  --       to cook 

                                        6)  Clarified butter ( optional ) 

                                         7)  whole cardamom black & green - 2 nos each 

                                          8) clove - 4 nos .

                                          9) Cinnamon - 1 stick 

                                          10) Dried red chili - 2 nos ( fried ) 

                                          11) dry roast cumin seeds & Fennel  & ground them

                                           12) black pepper powder - pinch 

                                             13) water - 4 cups

          
           Recipe -  1) Wash & keep aside the rice  .. put a deep  non stick  pan on heat pour oil or if choose can put clarified butter too  when it reaches its smoking point add cumin seeds  let it crackle add whole spices to the oil 


                         2) add Cashew nuts to oil let it be golden brown & now  add the rice mix it now add salt & 
sugar &  ground spices mix & black pepper powder  it now add 4 cups of water  .. & cover it with lead .. reduce the heat let it cook slowly .. 

                        3) check if rice is cooked properly then take it off heat garnish with fried red chili & coriander leaves & some fried cashew nuts .

                        4) serve  hot with Chicken or mutton curry 




                                        
                                                      Sweet & Sour Noodles



 Ingredients -  1) Rice Noodles  - 200gms

                     2) Chicken  ( boneless) ( cut in strips) - 50gms

                    3) Shrimps -                        50gms

                   4)Shiitake Mushroom ( cut it strips )  -  50gms

                    5) Spring onion -                  2sprigs

                     6) red capsicum ( thin sliced ) 1 nos

                      7) Ginger            ( thin sliced ) 1/2 inch

                       8) Rice wine vinegar - 50ml

                        9) light Soy & dark soy - 25ml

                         10) Fish sauce              - dash of

                         11) Honey -                        10 ml

                         12) Sugar -                           3 tbs

                         13)  Oil -  veg oil ( to fry )

                          14 ) Chicken stock

                           15) seasame seeds & peanuts ( roasted) for garnish

Recipe -               1) take a pan  put it on stove add Vinegar on it then add sugar & honey to it let it boil &

                                 sugar melt . Now add both soy sauces to & dash of fish sauce & let it boil & get thick  
                               now add ginger strips to it . take it off heat . keep aside .

                             2) put another pan in stove add oil to it , when oil in its smoking point add spring onion                                  
                                 capsicum to it  add shrimps , chicken & mushroom to it mix it well add bit salt  
                                 according to taste , now add 2/3 of the sauce to it mix it well . rest keep aside . add    

                                 two Tbs of chicken stock to this mix .
                       
                           3) mean while boil water & soak the noodles for not more than 1 to 1 1/2 mins . then take  

                         noodles out  run under cold water , pour dash of oil in them & rub that oil in the noodles &

                         now add the noodles in the pan mix in smooth motions .

                              4) take out the noodles pour the rest of the sauce over it .. garnish it with pan roasted      

                                seasame seeds & peanuts .

                              5) serve hot

                                                  Chicken Kasha ( Curry Dhaba style )


Ingredients - 1 ) Chicken leg pieces -  6 nos .

                     2) Potatoes - 3 nos ( medium size peeled & cut in half )

                     3) Onions -   5 nos . ( 2 sliced , & 3 nos paste )

                     4 ) Ginger paste - 3 tbs .

                      5) Garlic paste - 3 tbs

                      6 ) black cardamom - 4 nos

                      7) red chili - 4 nos

                      8) fennel seed - 10 gms

                     9) Nuteg & Mace - 1 nos each

                      10) green cardamom - 4 nos
                 
                       11) red chili powder - 2tsp

                        12) Coriander powder - 2tsp

                         13) salt & Sugar - to taste

                         14) Cashew & raisins - 20 gms

                          15) curd - 250 gms

                         16 ) coriander leaves - a bunch ( chopped )

Recipe - 1) dry roast 2 black cardamom , nutmeg , mace, fennel , red chilies & grind them together .

               2) wash , clean the chicken legs , now marinate legs with curd , onion paste , ginger & garlic paste ( half of them ) rest keep for curry , red chili powder , coriander powder , salt & sugar . keep aside for 45 mins to an hour .


               3) heat oil in pan add first  fry the potatoes & keep them aside , now green cardamoms to it then add sliced onions & fry them till onions are soft , now add Chicken & fry them well .

               4) now add ginger & garlic paste , onion paste , curd , red chili powder , coriander powder , & the dry roasted grounded  powder in a bowl & add it to the curry & adjust the seasonings  , now add little bit water & cover the pan & late the oil leave the masala

               5) when oil leave the masala add the potatoes & water keeping in mind how much thick or thin curry anyone want , also add 2 black  cardamom pods  & another Mace flower to the curry  .

             6) when curry is thick add the cashew nuts & raisins  make sure potatoes are soft & chicken is soft not chewy ..

             7) take them out in serving dish garnish with coriander leaves . or it also can be garnish with light cream .

              8) serve with Rice .

                                                        Chicken in Red curry Sauce 






Ingredients - 1) Chicken ( boneless ) medium cut - 400 gms 
  
                      2) Tomatoes - 3 nos ( medium size ) 


                       3)  Onion      - 2 nos . ( large ) chopped fine 


                       4) Ginger & garlic paste - 2 TBS .


                       5) Curd                             - 1/2 cup 


                        6 ) Tomato puree -                1/2 cup 


                        7) Red chili powder -           2tsp 


                         8) Coriander powder -        2 tsp 


                         9) garam masla  powder - 1/2 tsp 


                         10) whole spices -  2 cardamom , 1 cinamon stick , 2 cloves , whole cumin seeds 


                          11) oil - to cook 


                           12) salt - To taste 


                           13 ) Sugar -  to taste 
                               
                           14) coriander chopped - a bunch 

                           15) ginger thinly sliced - for garnish 




Recipe --    1) heat oil in a pan fry chicken with little bit salt both side light brown , take them out keep aside. 


                   2) heat oil in a pan add the whole spices then add Onion fry them till they are soft with 


                         little salt & sugar , now add tomatoes to it fry them well .


                    3) mix tomato puree , curd , ginger & garlic paste , & except garam masala all the dry spices in a bowl mix them & pour the mix in the pan , lower the heat & cook them till they leave oil  & add the chicken to it , & cover it with a lead let them cook in low heat till chicken are soft . If need add little bit of water . 


                     4 ) when they are well cooked gravy is thick  add garam masala mix them well 


                    5) take the curry out garnish them with coriander & ginger . Serve with Rice

                                                          Chicken Kofta Curry 


Ingredients ( for Kofta ) -- 1 ) Chicken  ( mince chicken )- 400 gms 

                                         2) potatoes - 2 nos boiled & mashed 

                                         3) bread crumbs - about 50gms 

                                          4) ginger & garlic paste ( fresh) - 1tsp 

                                           5) Onion - 2 nos . ( medium size  finely chopped ) 

                                            6) fennel powder - 1/2 tsp 

                                             7) coriander powder - 1/2 tsp 
                                        
                                               8) coriander  leaves  - chopped a bunch 

                                               9) salt & sugar           - to taste 

                                              10)  red chili powder - 1 tsp 

                                                11) oil - to fry 

Ingredients - ( for curry )   1) Tomatoes   - 3 nos . 

                                         2)    Curd  -   100 gms 

                                         3)  Ginger garlic paste - 1 tbs .

                                          4) red chili powder -   1 tsp 

                                           5) coriander powder - 1 tsp 

                                            6) garam masala  powder - 1/2 tsp 
                                             7) salt & sugar --- to taste 

                                               8 ) light  cream -  50 ml 

 Recipe - for  kofta - 1 ) mix all the  ingredients for kofta  & make them in small balls  keep them aside . 

                                  2)  heat oil in  frying  pan  , now deep fry the Chicken koftas , take them out in napkin to soak extra oil . keep them aside 


Recipe- For Curry -  1) make a paste of tomatoes & curd together  

                                 2) heat oil in a pan or Kadai   add small amount cumin seeds let it cackle 

                                3) add   ginger garlic paste to it fry them for a bit now add coriander , red chili  powder with bit of water , let oil leave the mix , now add tomato & curd mix  let it come to boil , now shimmer the stove .

                                 4) add  the cream to the mix , mix them  well , adjust seasoning with salt & sugar  add the chicken koftas to it .. cover the pan & let it in shimmer for 4-5 mins .. 

                                  5) take them out in serving dish  garnish them with cream & chopped coriander  , serve them with rice or Paratha or Roti

                                                        Non- Veg Recipes

                                           
                                         
                                          Prawns  with Orange sauce & Lychees



Ingredients - 1 ) medium size Prawns - 400gms

                     2) Orange Juice ( fresh squeeze or  preserved ) - 4 nos .

                     3)   Lychees ( cut , take out the seed chop finely ) - 4-5 nos 


                      4) Honey - according to taste ( how much sweetness perso like ) 


                        5 ) ginger & garlic paste - 1 tbs . 


                          6) Green chili  -    slit it between -    4- 5 nos. 


                           7) Salt - to taste 

                            8) soy sauce - a dash of it 


                             9)  Fish Sauce - dash of it 


                               10 ) cilantro ( chopped )  - for garnish 


                                11 ) vegetable oil -              for cooking 


                                 12 ) corn flour -            to thick the sauce


 Recipe - 1 ) wash  the Prawns remove the head  marinate with little salt keep aside 


                 2)  put a frying pan on stove  pour oil in it  just fry the prawns both side till they are firm .


                3) add little bit more oil in the pan add ginger garlic paste in that fry it a bit , now orange juice let it come to boil . 


                  4) add honey to it & season with salt adjust the sweet & salt let it boil to thick consistency 


                    5) add prawns to it mix them well add chopped lychees mix them well . 


                      6) now take soy sauce & fish sauce with corn flour with little water in a bowl , mix them & pour them in to the pan  give them a nice stir . 


                       7 ) take them out  in a serving dish garnish with chilies & cilantro .


                       8 ) serve them with white rice

Quick recipes

                                                                 Chili Garlic Prawn 






Ingredients - 1) medium size prawns ( cleaned) -200 gms
       
                      2) Garlic ( large)                           - 6 cloves


                     3) green Chili                                - 4-5 nos 


                    4) Onion   ( large sliced )              - 1 nos 


                    5) juice of half lemon 


                     6) Fish sauce                                 - 2tbs


                     7) light Soy sauce                           - 2tbs 


                   8) Salt & Sugar   & pepper             - according to taste 


                   9) cilantro  ( for garnish ) 
                 
                   10) vegetable oil                                - for cooking 




 Recipe - 1 ) marinate the prawns with salt , pepper & few drops of lemon juice  & keep aside 


                 2) make a paste of garlic cloves & chili ( 3 nos ) rest two chilies chop & keep aside 


                3) take a oak  or frying pan put oil in it then add garlic chili paste fry for a bit now add   prawns in the mix cook then for a minute now add onion &  cook them for another 2 mins .




               4) add fish sauce & soy sauce in the pan mix them now add lemon juice & sugar  cook them well  adjust seasoning with salt & pepper  , add the chopped chilies at end take  it out in a dish garnish with chopped cilantro . 


              5) serve hot with rice

Peas Carrot pulao



Pulao- ingredients - long grain Rice - 200 gms
                     
                      green peas  -    50gms

                      carrots     -    1  ( fine chopped )

                      Capcicum    -    1/2   ( chopped )
   

                      onion       -    sliced  1 nos

                       oil         - to cook

                      salt / sugar - to taste
 

                       cardamom. clove, stick - 1 pcs each ( crushed)




        Recipe -  1) par boiled the rice  drain the water keep it aside .

 
                  2) take oil in a pan   when its proper temp. add sliced onion fry till it white add rest of the

                       vegitables & fry it till its softer not mushy

               
                  3) mix vegitables & rice together with Crushed spices & salt & sugar  put it on microwave safe

                     bowl & microwave it for 3 mins .

     
                  4) garnish  with green chillis & fried cashewnuts ( if want)

Veg Recipes


Chana dal with Vegetables

                        Ingredients -
     
                        1) Bengal- gram pluse ( chana daal) 250 gms

                        2) Potato- 2 nos ( medium size )

                        3) Peas    - 50gms ( peeled)

                        4) Cauliflower- 1 nos ( small) cut in small florets

                        5) Onion       - 2 nos ( chopped)

                        6) Tomato       - 2 nos ( chopped)

                        7) Ginger & Garlic paste - 1 tsp.

                        8) Coriander leaves       - chopped ( for garnish)

                        9) Tomato puree   -        3 tbs

                        10) red chilli pdr -        1/2 tsp

                        11)  coriander pdr  -       1/2 tsp

                         12) oil             - to cook

                         13) salt & Sugar    - to taste



 Recipe-- 1) pressure cook channa daal with turmeric , salt, with vegetables except the tomato ( 5-6 whistels)

          2) heat oil in a pan add onions, with some sugar & fry till they are soft add ginger & garlic paste mix

            it well tomatoes & tomato puree cook it well with red chilli pdr, coriander pdr  when the masala      

       leave oil add it to the Daal & cook it for 2-3 mins.

          3) garnish it with chopped coriander leaves , serve it with Paratha or Puri
